This is what we had for dinner tonight. Texan comfort food.
2 Tbs Vegetable Oil
2 medium yellow onions, chopped
1/8 cup dry white wine
1 lb Sirloin steak, diced
1 tsp Cumin
1 tsp Oregano
1 Tbs Garlic
2 cups pureed tomatoes
2 Tbs tomato paste
1 cup beef stock/broth
2 14oz cans red beans or kidney beans
Salt
Cayenne Pepper
1 Tbs Flour
1 Tbs Masa
Put vegetable oil into a dutch oven. Put in onions and fresh garlic and sautee until soft. Add beef (you can substitute ground beef if you want. Also, tonight, I used 1.3 lbs of beef). Cook until beef is cooked through and onions and garlic start to brown. Add spices, salt and cayenne to taste. (Even 1/4 tsp cayenne is pretty warm, too warm for my kids so go slow!) Add wine to de-glaze the pan and remove brown bits. When the bottom of your pan appears de-glazed, add the tomatoes, beef stock, tomato paste and beans, reserving the bean liquid. Set it aside. Simmer on low for 20 minutes. Take bean liquid and add the flour and masa combining to make a glue like paste. Quickly whisk into the simmering chili mixture. Simmer for another 5 minutes until it has thickened up.
Serve over Fritos, add shredded cheese, sour cream. Garnish with your choice of chives, chopped sweet Vidalia onions, jalapenos and chopped tomatoes. We never use jalapenos because my kids just don’t really go in for the spicy foods.
