This my kid’s most requested meal. I have to double the recipe and make 2 so we have enough for dinner.
1 unbaked pastry shell – deep dish or the kind you unroll and put in your own deep dish pan. (Bake for 10 min @ 350, then set aside)
1/2 lb sausage, Italian is spicier so I usually use maple but use the Italian if your family likes the heat. Brown and place in cooked pie crust.
Then combine the following in a food processor:
1 cup cottage cheese
Blend until smooth and add to the food processor:
2 large baking potatoes, cooked until soft, peels removed
1/4 c sour cream
1/2 tsp Oregano
1/2 tsp Salt
1/8 tsp Pepper
Process all until smooth, spread into pie shells over sausage. Bake at 350 for 45 minutes. Remove pie, brush with melted butter. Sprinkle 1 cup sharp cheddar cheese over pie and replace into oven. Bake for 8 more minutes and remove pie from oven. Slice and serve.
