I have heard this called about 10 other names. If we let Dad make it, it’ll come out lemon. Which is just SO WRONG. Acceptable flavors: chocolate, white chocolate, chocolate fudge or butterscotch. Lemon and pistachio are acceptable only if there are two other chocolate desserts, one of them needs to be a chocolate cheesecake. In my family growing up, we almost always had a separate table full of pies and assorted desserts that was equivalent or more than the non-sweet Thanksgiving or Christmas Feast. My husband’s family will have 3-4 desserts. Which I just don’t get. How can we binge-eat desserts when there are only 4 desserts? HOW?
Layer One:
1 cup flour, 1/2 cup butter, 1/2 cup pecans. Soften the butter, then cut the flour into it and add the nuts. There’s a nut allergy on Robert’s side of the fam (real tragedy that). I tried substituting white sugar. Don’t do that. It makes it hard to get out of the pan. Press into the bottom of a 9”X13” pan. Bake for 10 minutes at 375 F.
Layer Two:
1 cup Powdered Sugar, 1 8 oz package of cream cheese, and 1 cup non-dairy whipped topping. Mix sugar and cream cheese well and then fold in the whipped topping, or use whipped cream if you are feeling uppity. Spread over layer 1 when it has cooled completely. Refrigerate until layer 2 is ready to spread on.
Layer three:
2 smaller packages of pudding, the same flavor. Don’t go trying to experiment with this. I’ve tried it. Trust me, just don’t. 3 cups of milk. It calls for 4, but use 3! Blend milk and pudding. Before it sets up, pour over layer 2. Refrigerate until pudding has set up.
Layer four:
2 cups whipped topping/ whipped cream. If you are feeling fancy, you can chop up a Hershey bar, crumble some oreos, or sprinkle some pecans or some other fun topping over the top. Chill for at least 2 hours before serving.
