Recipe given to me by Shauna Taylor. I would say this is my favorite coleslaw recipe, but I hate coleslaw. Well, I did until I had this one. So of course, I had to have the recipe. Goes so well on pork sliders.
2 cups Mayonnaise
1/4 cup Sugar
1/4 cup Course ground, or dijon mustard
1/4 cup Cider Vinegar
2 Tbsp Celery Seeds
1 tsp Salt
Pinch pepper (1/8 tsp)
3 10 oz bags of finely shredded cabbage, or one head of cabbage.
2 large Carrots, grated
1 bell pepper, finely diced, I use yellow, they are sweeter.
Mix the first seven ingredients for the dressing. Set aside. Toss cabbage, carrots and bell pepper in a large bowl, pour dressing over and toss well. Cover and chill for 2-3 hours. Serve with a slotted spoon. **This side dish is a must when serving barbequed pulled pork and rolls.
